Hash Brown Breakfast Casserole Recipe - an easy and delicious overnight breakfast casserole made with Bisquick! Great for overnight guests and a quick weekday breakfast. Bisquick, sausage, hash browns, sharp cheddar cheese, eggs, milk, salt, and black pepper. Serve with fresh fruit and grits. This is sure to become a family favorite!
Cook sausage and onion in a large skillet over medium-high heat 5 minutes or until meat crumbles. Stir in hash browns, and cook 5 to 7 minutes or until sausage is no longer pink and potatoes are lightly browned. Drain mixture on paper towels; spoon into a greased 13- x 9-inch baking dish. Sprinkle with shredded cheese.
In a bowl, whisk together eggs, milk, Bisquick, salt, and pepper. Pour Bisquick mixture evenly over sausage mixture. Cover with aluminum foil and refrigerate for 8 hours.
Remove baking dish from refrigerator. Preheat oven to 350ºF.
Bake covered for 45 minutes. Uncover and bake 10 to 15 more minutes or until a wooden pick inserted in the center comes out clean. Remove from oven, and let stand 5 minutes.
Notes:
Can substitute turkey sausage.
Don't like sausage? You can substitute ham or bacon.
Feel free to add some onion and/or bell pepper to the casserole. Sauté them in the skillet with the sausage.
Use gluten-free Bisquick for a gluten-free meal.
Can Hash Brown Casserole be frozen? Yes! Assemble the casserole and cover the pan with plastic wrap and aluminum foil. Place in the freezer for up to 3 months.
When ready to bake. Thaw the casserole in the refrigerator overnight. Remove the plastic wrap and recover the pan with foil. Bake as directed.
